Becoming a Foodie

For about a year now I have been working on getting my life back, and by that I mean kicking my butt working out and eating as clean as possible. So far so awesome because I have lost 75lbs, with 25 more to go till my goal! How freaking cool is that? Now I would love to sit here and rav about crossfit, and don’t you worry, I plan to, but today I thought I would share some of my favorite meals I have made. Hopefully this will inspire you to put on your chef hat and start cooking clean!


Tilapia and Roasted Veggies: Atleast I am calling it tilapia, I honestly do not remember what kind of fish it was but any white fish will do. All you do is take whitefish, garlic, dill, evoo, lemon slices and other herbs and spices and wrap it all tightly in parchment paper. For bake time I just followed what was on the fish package. The rest of the pan was filled with mixed veggies and spices. The dinner was amazing and while I couldn’t exactly convince my husband on the veggies (he had smashed red skins), he loved the fish! Coming from a man with limited taste for seafood, that compliment is worthy.


Are these things called stratas? Who knows? Who cares? When it tasted this tasty your not picky with names. Start with some quality sausage in a medium pan, once it is done drain the icky grease. Now when it comes to asparagus, and when I’m in a hurry I clean and chop them into 1 inch pieces, wrap in a paper towel and microwave for about 1-2 minutes. Once they are done add them to the pan with the sausage, and then some thinly sliced roma tomatoes. Whisk 2 eggs with garlic powder and black till frothy, pour in the pan. I had it on medium heat till the egg appeared to be 90% done and flipped it. I topped mine with some salsa, but I am sure it would have been great with hot sauce too.


Let’s play the name game, and you name this? While your add it, try and guess all of the ingredients too because I sort of forgot. I know I started by cooking some sliced sweet potato in coconut oil. I’m pretty confident i added in some apple pie spice, honey, and cinnamon. It appears I tossed in some cranberries and seeds too. I remember this making my apartment smell like thanksgiving dessert. I served the sweet potatoes with a spoonful of almond butter and a couple scoops of frozen coconut cream.
